When Wind Creek Chicago Southland Casino opens in spring 2024, guests will be treated to some top-end dining options run by a world class chef.
Last week, the future Illinois casino announced a partnership with Fabio Viviani Hospitality, LLC to manage the food and beverage options at the casino. Wind Creek will be located 30 minutes south of Chicago in East Hazel Crest and Homewood.
Wind Creek acting general manager Roger Kuehn said in a press release:
“Bringing in a partner like Fabio Viviani to our Chicago Southland property is a home run for our food and beverage offerings. Fabio’s expertise in the hospitality industry will give Wind Creek Chicago Southland an unmatched competitive edge.”
Viviani is a former star of Top Chef
Viviani is a celebrity chef that appeared in two seasons of the Bravo show Top Chef. He now has his own cooking show, Fabio’s Kitchen, and his LLC operates 50+ hospitality businesses across the U.S.
In the Chicagoland area, Fabio Viviani Hospitality, LLC runs these restaurants:
- Bar Siena in Chicago and Skokie
- Prime and Provisions in Chicago
- Chuck Lager in Barrington, Glenview, Orland Park and Pine Creek
- Fresh Stack in Kildeer and Oak Brook
- BomboBar in Chicago
Viviani had this to say about the partnership:

What Viviani will bring to Wind Creek
Will Wind Creek be home to some of the restaurants in Viviani’s portfolio? Will he open entirely new restaurants in the casino? No announcement, yet.
What we do know is the deal includes a steakhouse, food hall, dining service for hotel rooms and banquets.
Wind Creek faces stiff competition with a handful of Indiana casinosjust across the border. Ameristar Casino Hotel East Chicago, Hard Rock Casino Gary and Horseshoe Hammond are all a 30 minute drive or less from Wind Creek’s future site.
Matching the gaming experience at those casinos will be important to draw patrons. But adding dining services from a notable name such as Viviani will help give Wind Creek a leg up on its foes in the Hoosier State.

Wind Creek will also feature many table games and slot machines. Construction kicked off last summer on the $440 million project.
